An Investigation to see the effect of yeast. Does yeast make a difference?

Prediction
I think the bread with yeast will rise the most.

What I Used

110ml warm water (hand warm)
8g of yeast
3 teaspoons of sugar
250g of plain flour or 250g of ready mix (contained flour and yeast)
20ml sunflower oil
A pinch of salt
Measuring jug
Teaspoon
Weighing scales

We made four types of Bread

1. Contained most ingredients but not yeast, sugar or salt
2. Contained ready mix
3. Contained ready mix and oil
4. Contained all ingredients (except ready mix)

What we did (for bread 1)

1. We measured out 250g of plain flour and put the contents into a bowl. This was put aside.
2. 110ml of hand warm water was put into a measuring jug. 8g of yeast was added. Both sugar and salt were put in and given a stir. This was left for 10 minutes. It bubbled up.
3. After 10 minutes, we put the water in the bowl and kneaded it.

What happened
The dough began to rise and open up.

Why this happened
The salt and the sugar activated the yeast and the dough started to rise.

What we found out
We found out that the more the yeast, the more it rose. The less the yeast, the less it rose.

Bread 1
This bread was not tasted due to health and safety reasons.

Bread 2
This bread tasted yummy but the crusts were very hard.
Bread 3
This bread tasted better than bread 2. It was soft but the crusts was just as hard as bread 2.
Bread 4
This bread tasted delicious, soft. crusts with lots of air bubbles inside.

Conclusion
I think it is better to stick to a recipe when making bread. Don't use ready mix! We liked the bread 4 which had the yeast best!
